- Strong focus on regionality, seasonality, freshness and sustainability
- Colourful, good-humoured team from young to almost a little old, but feels young
- Old watermill from the 15th century, but constantly modernised and rebuilt.
- Family-owned since 1936 - the next generation is ready to take over!
- Flat hierarchies and short official channels
In short, we are just like real life: Far from perfect, somehow always different and yet constant, a little crazy and yet grounded, rooted in our tradition, but always with an eye to the future - this one characterised by the idea of using resources carefully.

created brushwood and old wood piles for hedgehogs, ground-nesting birds etc.

Suppliers checked for sustainability and converted if necessary
Cultivation of own herbs etc.
Fruit from the garden
We only serve out-of-home orders and buffet leftovers in ReBowl deposit trays
Coffee to go is of course served from the corresponding ReCup deposit cup
Water flowers and herbs with drip water
Renovation with solvent-free paints
Refurbishing old furniture
Climate-neutral laundry
Biological sewage treatment plant
